Wilder Garcia, Peru
Regular price £17.50Wilder Garcia is a young producer from Huabal, Cajamarca. The region counts as one of the most productive areas in Peru. Wilder owns hectares of land, 16 of which he uses for coffee production. After the harvest, Wilder’s team depulp the cherries - often on the same day - and ferment them for 48 hours in hermetic tanks before drying in solar dryers.
Through his production he maintains environmentally friendly agricultural practices and focuses on social responsibility. In recent years, Wilder has introduced a new tissue management system based on a two-year cycle and skeletal pruning. This means that Wilder divides his land into two blocks. These blocks are pruned on a rotational basis to ensure consistent long-term production.
The average farm size in Peru is about three hectares, which makes the structure of the coffee industry very fragmented and Wilder's farm is a bit of an exception. His coffee is grown in the Peruvian highlands which offer unique climatic conditions, with special rainfall and a surprising microclimate. This is because of both the altitude and the reforestation forests that surround their farm.
Peru is the world’s fifth largest producer of Arabica coffee and it is gaining in popularity. The thin air, soaring altitudes, and fertile soil throughout Peru come together to form a breathtaking environment where coffee thrives. However, there is also generally less investment in roads and infrastructure, so transporting coffee can be slow, costly, and even dangerous.
Expect tasting notes of marmalade, lime, blackcurrant
