Pivot

Regular price £12.00

Pivot is sourced with experimentation in mind. Fruit forward and always exciting — Pivot is single-origin espresso as it should be. Pivot is also perfect for pivoting between different brew methods — fantastic as an adventurous espresso, but just as great as pour over or in a cafetière.

Jailer Andrés Trujillo is a natural at producing naturals. Because of the climate, naturally processed coffees are relatively difficult to process in Colombia, making his coffee a bit of a rarity and himself one of a minority of smallholders who have chosen to go down the route of producing naturals. Jailer’s coffee is always a luxurious affair with an intense boozy flavour when brewed as espresso.

He is a native of Planadas, Tolima. In 2014, together with his wife, Jailer decided to acquire the La Esperanza farm and they have now been operating it for over 20 years. Proud of his farming origin, Jailer looks after the well-being of his family as well as his community.

The reason that Jailer produces natural coffees is because of his Adventist belief and above all respect for the environment that he has. So, he no longer pulps the coffee cherries, saving thousands of liters of water that would usually end up in river basins contaminated with leachate waste.

After picking only the ripest cherries, they are placed in movable beds. After two days of sun exposure, and dropping the initial humidity, the cherries get packed in GrainPro bags and fermented for 48 hours. During this period the PH and moisture levels are constantly checked. After fermentation, the cherries are placed on the movable beds again to dry them even more. The movable raised beds have full sun exposure during the daytime and at nighttime, when the temperature drops and the relative humidity increases, the drying beds are stored inside the production building. The cherries get hand sorted at picking, later again during the drying process and a third time after the milling process to remove defects that can only be spotted in the green beans, making this coffee an incredible quality.

Expect tasting notes of cherry chocolate, tropical fruits, cola

Excellent coffee, really nice flavour. I use in my espresso machine and it's got a lovely flavour profile.

I've ordered the Pivot a few times, and it has never disappointed me. Always very flavorful and slightly experimental (but not too much). It would just be nice if they could write a little background on why they selected their current beans for their Pivot roast.

Great flavour, plenty of character, rich and fruity. Never gets old!

Haven't come across another coffee like it in terms of taste, and it's quite easy to dial in a good espresso with it.

This really is fantastic flavourful coffee

So good to be able to have my favourite coffee shop coffee at home. Love the acidity that brings so much flavour without being jarring.
