Our latest coffee release in the Segundo Ortiz, from Finca Alto Roblalito near Nataga in Colombia. We were blown away by this when we tasted it on the cupping table, the creamy sweetness of a natural coffee (just like strawberry cream for us), but clean like a washed coffee (we’re saying blackberry and pineapple), this coffee is actually washed, but with an extended dry fermentation of 24-36 hours.
Segundo Ortiz controls this dry fermentation by measuring the temperature and sugar content of the coffee, all without lots of technical equipment. This gives these coffees a much different profile from other local coffees. They also have a slower, two-phase drying process, which keeps the flavours of the coffee intact for longer.
