This coffee originates from Evin Joel Moreno's farm which is part of a pristine forest designated as a national park. Evin initially dedicated himself to vegetable farming, but by 2010, declining profits amid rising costs prompted him to consider a shift in his agricultural pursuits. Seeking guidance from his father, an adept coffee producer in the area, Evin made the transition to coffee cultivation. As financial strains loomed, Evin's wife moved to Europe for work, a shift that ultimately uplifted their financial situation.

Evin's debut in the Cup Of Excellence competition in 2013 landed him a notable 12th place. Bolstered by this triumph, he carefully prepared his first specialty micro-lot and with improved prospects soon enough his wife made her way back to the farm. Today, their unyielding pursuit of excellence in farming and processing, commitment to enhancing their coffee's quality mirrors their ambitious vision for the future.

What is washed anaerobic processing

The cherries are hand-picked at peak ripeness, then, are put into plastic barrels with hermetic seals for anaerobic fermentation for 72 hours, then, the cherries are de-pulped and put into tanks to have a dry fermentation for 4 hours more. After, the parchment is rinsed into the tank with a lot of water four times. Next, it´s put inside the parabolic solar dryer for around 18 days, during the drying the parchment is sorted by hand to remove defective beans.

Expect tasting notes of stewed pineapple, hibiscus tea, red apple.
